Green Bean Salad with Maple Mustard Dressing ingredients

8 Salad Ingredients:

  1. Green beans are blanched to maintain their crispness and vibrant color and create the base for this salad. No lettuce in sight! Green beans are a good source of fiber with vitamins A, C, K, folate and potassium.
  2. Cucumbers add a refreshing crunch and light flavor. It complements the green beans because they do have a different texture.
  3. Red onion provides a sharp, slightly sweet bite. If you’re not a fan of raw red onion, you can omit it, but it does add a great complimentary flavor.
  4. Dill and parsley enhance the salad with bright, herby aromas that make spring salads just pop!
  5. Feta brings a creamy, tangy contrast to the salad. Don’t do dairy? Skip it or opt for a plant-based alternative.
  6. Pumpkin seeds offer a nutty crunch for added texture. They’re also full of healthy fats, iron, magnesium and even some fiber too.
  7. Dried oregano adds an extra hint of earthiness to round out the flavors at the end! Personally, I think dried oregano belongs in every salad it’s that good!

Ingredients for the Maple Mustard Dressing:

The Maple Mustard Dressing is a really basic recipe that’s absolutely delicious! I use it on all sorts of salads, but it really complements the flavors in this green bean salad.

  • Dijon mustard gives the dressing a zesty, slightly spicy base. You can use any mustard here, but I find Dijon to be the best!
  • Olive oil helps create a smooth, well-balanced dressing.
  • Maple syrup adds sweetness that pairs beautifully with the mustard. You could swap in honey for a more traditional honey mustard dressing, but I love the flare that maple syrup adds instead.
  • Salt & pepper to taste

How to Make Green Bean Salad with Maple Mustard Dressing

Step 1: Blanch the Green Beans

Bring a large pot of water to a boil. Add the green beans and cook for just 4-5 minutes until they turn bright green and are tender-crisp. Immediately drain and transfer them to a bowl of ice water to stop the cooking process. This keeps the beans vibrant and crunchy.

Step 2: Prepare the Maple Mustard Dressing

In a small jar with a lid, combine Dijon mustard, olive oil, maple syrup (or honey), salt, and pepper. Shake vigorously until well combined and smooth. Set aside while you prepare the rest of the salad. You can read more about this dressing in its own post here!

Step 3: Assemble the Salad

In a large bowl, combine the blanched green beans, sliced cucumbers, red onion, dill, parsley, feta, and pumpkin seeds. Sprinkle with dried oregano for an extra layer of flavor.

Step 4: Add Dressing & Toss

Drizzle the Maple Mustard Dressing over the salad and toss everything together until well coated. Serve immediately or let it sit for a few minutes to allow the flavors to meld.
