2-Ingredient Breakfast Tacos

  • 6 eggs
  • 4 6-inch tortillas, whole wheat or corn preferred*
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: 1/4 cup grated Mexican blend cheese, avocado or guacamole, salsa, cilantro

Instructions

  1. Scramble eggs together in a small bowl until combined. Add spices and set aside.
  2. Coat a medium-sized skillet, with organic butter or nonstick oil spray (I used avocado oil in my misto sprayer), and heat over low-medium heat.
  3. Once the pan is warm, add eggs and scramble slowly until cooked, about 5-7 minutes. If adding cheese, add once eggs are almost cooked through.
  4. When eggs are no longer runny and cooked through, turn off heat.
  5. Divide eggs amongst tortillas, then top with salsa, chopped tomatoes, sliced avocado or guacamole and cilantro. Enjoy! 🙂

Notes

*You can warm tortillas in a dry skillet, if desired.
