What I Ate Wednesday 44
Hiiyyyaa friends!
Oooooohh did I have a DELICIOUS and very busy day!
I woke up feeling surprisingly refreshed on Monday morning…considering I barely slept the entire weekend ((nope, didn’t have that much fun))…I was werk werk werking til the weeeee hours of the morning. Have you ever had one of those weekends?? It can definitely feel rough come Monday, so I was glad I woke up invigorated…
I was feeling a little discouraged on Sunday evening — the social media comparison game on Instagram got to me — so I channeled my inner badass when I woke up, ready to kick some bootaayyyy and get back to work and make things happen!
And it started bright and early with a cup of coffee in bed (thank you S!), a huge glass of water, my probiotics, and this delicious smoothie bowl…
I made my usual green cocoa smoothie and topped it with pom seeds, blackberries, chia and sunflower seeds and One Degree Organic Foods brown rice cacao crisps (SO GOOD!).

I caught up on social media over breakfast, then caught up on a bunch of some emails and then got to work on my research project to get my masters degree (SO SOON!!). My butt literally didn’t leave my desk chair for about four hours until my stomach got grumbling again. Yes, I’ve been WAY too sedentary the past week, but sometimes that’s just life…
I downed a glass of water and was ready for lunch…
Some leftover salad from last night, a slice of sweet tater toast topped with smashed avo and a couple of scrambled egg whites…with a clementine for dessert! ((Is anyone else obsessed with the huge boxes of clems right now?! SO good!!))
I tried to go back to my school work, but I just wasn’t focusing so I decided to take a break and get busy in the kitchen. My mind has been raaaaccccccing lately with so many recipes to make and share with you guys, so I just went with it…all with two ingredients…chocolate + sunflower seed butter! YUP, feeling alllll the hormones!
I made chocolate sunflower seed butter blender muffins (YUM!), chocolate covered sunflower seed butter stuffed dates (double YUM!…and the recipe is on my Instagram, so go get it NOW!)…
…and CRISPY chocolate sunflower seed butter cups (TRIPLEQUADRUPLEQUINTUPLE YUMS!)…
I licked my fingers more than a few times in the process, but only took one bite (whaaat) of each during my photo shoots…now that’s what I call being too busy and trying to get alllll the pictures in before your light changes!
OK…I’ll let you droooool a little and get excited… allllllll the yumminess is coming riiiiight here ASAP!
I had a work call and then rushed off to class with a packed salad because I knew I’d be hungry for some real fuel during my looooong class…
Enter greens, cukes + tomatoes (hidden under there, promise!), plus roasted butternut squash and carrots with a dollop of hummus and baked salmon and grapes…so essentially everything I had in my fridge! With a side of decaf green tea + water.
I’m still healing a quad injury, so I skipped my Monday workout, but did this Tracy arms workout, some stretching and a few sun salutations when I got home from class. I made dinner for S and could use another snack myself, so I had some sauteed veggies with a sprinkle of roasted edamams and got to watching The Voice while writing this post! Who’s your favorite this season? I’m obvs obsessed with Billy, but love We and just about everyone else on the show!
I made S taste everything I made earlier in the day ((it was reallllll hard to convince him!)), finished the half of the date I bit into earlier ((yup, I saved the half because it was THAT good!)), ordered more chocolate online because I used up our stash today, ate a handful of grapes and a spoonful of sunflower seed butter because, yes, I was STILL HUNGRY (sorry no pic!), made tomorrow’s breakfast and called it a night!
