The Easiest Vegan Burger
A few weeks back I went for dinner with some friends at the Todd English Food Hall at the Plaza Hotel. You can order everything from sushi to pizza, but what caught my eye was the vegan burger. Unlike your typical “vegan burger” you may see on a menu, based with beans, this ENTIRE burger was made from VEGETABLES.

I HAD to make this at home! This was the easiest vegan burger recipe I’ve ever created or made! One day I had a bunch of random veggies in my fridge and got cooking! (You can really make this with whatever veggies you have on hand!)
- 4 portobello mushrooms
- 1 roasted bell pepper
- 1 yellow zucchini, ¼” slices
- 1 green zucchini, ¼” slices
- ½ onion, sliced horizontally (about ¼” thick)
- 1 eggplant, ¼” slices
- 1 tbsp balsamic vinegar
- Olive oil
- Salt and pepper
- Preheat grill or grill pan.
- Coat vegetables lightly in olive oil, sprinkle with salt and pepper.
- Grill vegetables, approximately 5 minutes on each side. The mushrooms and onion take longer than the zucchini and eggplant. Vegetables should be soft and a nice char mark should form.
- Once grilled, toss in a mixture of balsamic vinegar and 1 tsp olive oil.
- Assemble into burgers.
