I’m dropping in for the quickest of quick notes today. You see, last week and this weekend were packed with busyness…
I had this HUGE catering-type event for my Food Production class. We had to cater a Fall Harvest event for 100 people from the nutrition department! We created the menu, requisition, production schedule, and then executed the event cooking everything in the kitchen over 13 hours! Let me just say I had an achy breaky back Friday evening! But everything went off without much of a hiccup so it was quite the success!

After lounging around all day Saturday, I had my camp friend’s wedding Saturday night! The bride looked BEAUTIFUL and it was so much fun!
The next two weeks I have midterms (womp. womp.). I may be a little M.I.A. over here, but I’m thinking of ya and have SO many great recipes planned!!!
So anyways, here’s a quick side dish/snack/brunch accompaniment for you! These sweet and spicy roasted sweet potato wedges are bomb.com [yes, I just said that!].
I LOVE sweet potatoes and yams [yes, they’re 2 different things, but I’m not getting into that now!] because they’re chock full of good-for-you nutrients that we need:
- Beta carotene gets turned into vitamin A…so it’s better to see you with, my dear!
- Fiber keeps us full, our bellies happy, and ahem, regular.
- Vitamin C helps keep colds at bay, which is especially important this time of year! Have you gotten your flu shot yet?!
- Iron is required for our blood protein, hemoglobin, which carries oxygen to all of our organs and muscles. Women of child-bearing age especially need enough iron!
- Biotin, a B vitamin, which keeps our nails and hair strong.
- Potassium is an essential electrolyte in our bodies that keep everything from our heart working properly to electrical nerve transmission.
OK, that’s enough nutrition ed for the day! Now go preheat your oven to reap all of these benefits!
Slice. Toss. Roast. Enjoy. *4* simple steps to roasted sweet potato wedges HEAVEN!
- 4 small to medium sweet potatoes, cut into wedges
- 1 garlic clove, finely grated
- 1 teaspoon cinnamon
- 1/2 teaspoon chili powder
- Pinch of cayenne pepper
- Pinch of brown sugar
- 7 turns of freshly ground black pepper
- Sea salt (to taste…I used about 1/8 teaspoon)
- Olive oil to coat
- Preheat oven to 375° F.
- Cut sweet potatoes into wedges, as pictured.
- In a medium bowl, combine sweet potato wedges, garlic, spices, and just enough olive oil to thinly coat potatoes.
- Roast for 15 minutes, then carefully flip, then return to the oven for another 15 minutes. Potatoes should be mostly cooked. Broil for 1-2 minutes to crisp edges.
- Serve immediately with hot sauce, ketchup, or honey mustard dressing!
Simple as {sweet potato} pie!
