Friends Who Brunch + Smoked Salmon Avocado Crostini Recipe
A crowd-pleasing appetizer, this nutritious one-bite smoked salmon avocado crostini recipe juxtaposes creaminess and crunch with the perfect salty and refreshing bite!
Happppyyy Friday!!! What’s on tap for your weekend?
Perhaps everyone’s favorite meal…BRUNCH?!
I love me a good brunch. I mean, who doesn’t?! And while trying the latest NYC hot spot for the ultimate post-workout meal on Sunday morning is on my list of things I love about this city, I recently realized that I hadn’t had a proper house apartment warming (yes, eight months later)…and hosting brunch was a great way to do it!
Sometimes I think the art of entertaining is gone. I don’t know if this is specific to living in a big city, but all social gatherings seem to be centered around dining out or drinks after work…or maybe the occasional workout class with a friend (my fave!). Well, since I’m one of the few of my friends who cooks (helloooo food blog), I was super excited to have my friends over, because believe it or not, I rarely cook for others.
(Any other food bloggers out there sometimes get nervous when people eat their food right in front of them? Just me? Yeah…I know I’m a weirdo!)
I come from a long line for expert entertainers. I’ve heard stories from a young age about how my grandma would throw these great parties — my mom’s sweet 16, engagement party, etc. — in her tiny house. And my mom entertains like she’s a professional party planner. Whether it was a casual weeknight dinner when a friend would stay over or my sister-in-law’s bridal shower, every “event” at my house was done to perfection. 5-star class, 10 out of 10 for taste and presentation…and she managed to do it all with an effortless glow!
Since I invited my oldest friends over, there was no hiding — they know where I come from!
So how did this 26 year old with zero solo entertaining experience, living in a small NYC studio with an even tinier NYC kitchen, pull it off?
With lots of planning and a bit of a frazzled morning, but an “it’s OK if something goes wrong” attitude (and guess what…I don’t think anything really did!).
First, I planned my menu. This was the fun part — I went pin crazy! I created a separate “brunch” board and just pinned whatever for-the-masses brunch dishes looked good.
Upon finalizing my menu, I took any possible food allergies, likes and dislikes into consideration. If you’re unsure about your guests’ allergies, it never hurts to ask!
Then, I made a shopping list. I printed every recipe, and tallied what I needed for each recipe…it was a lot of greens and eggs! I organized my list by grocery store department to make shopping easier!
I taped my recipes to my kitchen cabinets for easy reference while I was cooking and anything that could be made ahead of time was…
- I made the muffins and zucchini bread nearly a week before my brunch and froze them. Worked like a charm!
- The night before I prepped my french toast bake so all I had to do in the morning was preheat the oven and wait for the strong scent of cinnamon, coconut sugar, and heavennnn.
- I also pre-chopped a bunch of veggies for a salad (recipe coming soon!) and the smoked salmon avocado crostini (recipe below!).
By the time my guests started arriving, appetizers were out and my egg bakes and french toast were in the oven!
Do you want the recipes?! I’ll share over the next few weeks…starting right now!
One thing mom always taught me about entertaining is that you should always have something out to munch on as guests start to arrive. Since everyone loves a good app (am I making too many generalizations today?!), I wanted something impressive, but EASY…so enter these smoked salmon avocado crostini!
Smoked salmon can be a love it or hate it type of food, but I knew my friends would eat this right up…and I have to say, they were the first to go! All ingredients are raw, so you just have to assemble. Do yourself a favor and buy whole grain crackers to make it easy…they add a great crunch next to the creaminess of the avocado and soft salmon.
But one thing not to forget — the dill! It really elevates these crostini to make them feel special!
Assemble no more than an hour before guests are set to arrive…you don’t want the crackers to soften from the avocado sitting too long!
Happy brunching!
Ingredients
- 2 Persian cucumbers, thinly sliced
- 2 small avocados
- 3 tablespoons dill, chopped
- 1/4 teaspoon lemon juice
- Dash of garlic powder
- Pinch of salt
- 6 ounces smoked salmon, thinly sliced
- 30 whole wheat pita crackers
- Additional dill for garnish
Instructions
- Thinly slice cucumbers on an angle. Set aside.
- In a small bowl, roughly mash avocados. Add dill, lemon juice and spices. Mix to combine.
- To prepare smoked salmon for assembly, cut into bite-sized pieces and roll.
- To assemble crostini, spread about a teaspoon of the avocado mixture on a whole grain cracker or bread. Layer the smoked salmon and cucumber slice, then top with additional dill to garnish. Enjoy!
Don’t forget to PIN IT…
Happy weekend 🙂
