I’m not sure about all my fellow bloggers out there, but there are some recipes I have been meaning to post for AGES. Either I whipped up a recipe on a whim and have been meaning to re-test it and photograph it or I just forget about a ((genius)) idea I think I have or I think I’ll save it for a better time. THIS is one of those recipes!

After college I lived in Tel Aviv for two challenging, inspiring, culturally-rich and DELICIOUS years. I was thoroughly disappointed when I returned to the States because we do not know fresh food here and it’s a complete shame! Between Israeli salad, hummus, babaganoush, this spicy tomato salad (that I have no idea what it’s actually called), four years after I flew home from the Holy Land for the last time, I’m still so inspired by Israeli flavors. One dish that was my go-to every weekend was SHAKSHUKA

When I first moved to Israel I’d never even heard of shakshuka. Have you??? By the end of my two years there I didn’t know how on earth the delicious, slightly spicy, tomatoey dish wasn’t in my life for forever.

Here’s how I try to re-create the deliciousness that is Simple and Spicy Shakshuka

In a large sauté pan or cast iron skillet, sauté onions and garlic ((and you can add really whatever vegetables you’d like)) in olive oil.

Add diced tomatoes, True Made Foods ketchup and hot sauce — it sounds unusual, but True Made Foods products are my latest obsession and even have VEGGIES hidden inside their deliciousness! If you’re a condiment queen, like moi, you neeeed to try True Made Foods products!!

Then comes the fun part…carefully carve out a couple of holes in the tomato mixture and crack each egg into a hole. Cover your skillet to let the eggs cook. The whites should be completely opaque when cooking is complete.

Before serving, add an additional drizzle of True Made Foods Veracha and chopped basil.

How easy peasy?! And good for you too! Cooked tomatoes are loaded with lycopene (**antioxidants**), vitamin C and fiber! Plus eggs are a great source of protein and vitamins A, B and D.

Simple Spicy Shakshuka

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: 1-3 servings

Serving Size: 2 eggs

Ingredients

  • ½ tablespoon olive oil
  • ½ cup chopped yellow onions
  • Freshly ground black pepper
  • 2 teaspoons no salt added Italian spice blend, divided
  • 1 15 oz can of diced tomatoes (no salt added)
  • 1 tablespoon True Made Foods Ketchup
  • 2 tablespoons True Made Foods Veracha hot sauce, divided
  • 2-6 eggs
  • Optional: Chopped fresh basil for garnish

Instructions

  1. In a large sauté pan or cast iron skillet, sauté onions and garlic in olive oil until translucent. Season with freshly pepper and 1 teaspoon Italian spice blend.
  2. Add diced tomatoes, True Made Foods ketchup and hot sauce and reduce to a simmer. Let the mixture cook for about 7-10 minutes to thicken slightly. Then add an additional 1 teaspoon of Italian spice blend. If desired, you may add a pinch of salt.
  3. Using your spatula, carefully carve out a couple of holes in the tomato mixture and crack each egg individually into a hole. Cover the pan to allow the eggs to cook. When cooking is complete, the whites should be completely opaque.
  4. Garnish with chopped basil and additional Veracha...enjoy immediately!
