Farmers Market Chopped Summer Salad

When I lived in Israel there were certain fruits (namely, blueberries) that I desperately missed because I literally could not buy them. Not even for a premium price…not even frozen! Zilch. Zero. Nada.
At the time I didn’t fully appreciate the fact that every morsel of produce I ate was locally sourced because I just wanted some bloobs to the face, but now I realize how lucky I really was.
Living in New York there’s only a short period of time when I can purchase 100% of my produce for the week at the farmers market, which means I am 100% eating local. (OK, so maybe I could do this more if I tried and planned a little better, but ya know what I mean?!)
Right now is that time…..
Which means it’s the perfect time for a loaded chopped summer salad EVERY. SINGLE. DAY. Because all the cool kids know a finely chopped salad tastes oh soooo much better!

I kept the dressing on this salad super simple and light because the veggies are the superstars and I didn’t want the dressing to outshine them. I didn’t even add fruit to this salad…and I love adding fruit to salads!

This chopped summer salad is bursting with insane fresh flavors that scream late summer! Plus, you don’t need to turn on your oven and can buy every ingredient in season now at the farmers market! Vegan, Gluten Free, Grain Free, Paleo, Dairy Free
Ingredients
For the salad:
4 cups spinach, chopped
2 Kirby cucumbers, chopped
1 medium bell pepper, chopped
1 large heirloom tomato, chopped
1 large beet, steamed and chopped
1/2 cup raw green beans, chopped
1 ear corn, kernels cut off the cob
1 medium avocado, skin removed and diced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh cilantro, chopped
2 tablespoons fresh dill, chopped
For the dressing:
3 tablespoons good quality extra virgin olive oil
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
1/4 teaspoon honey
1 garlic clove, finely minced
Pinch of smoked paprika
Pinch of oregano
Salt and black pepper, to taste
Instructions
Prepare all salad ingredients and combine in a large bowl. Set aside.
In a small bowl, whisk together all dressing ingredients until uniform consistency forms. Adjust spices to taste.
Cautiously dress salad, tossing to combine. Remember, you can always add more dressing, but you can never take it away, so start slow!
Toss well and enjoy!
