Avocado Toast
One of my absolute favorite snacks: AVOCADO TOAST. Creamy avocado complemented with sea salt on protein- and fiber-rich bread…simplicity at its best, the unrivaled breakfast, lunch, or snack.
School is officially in full swing! You know those days of undergrad where they ease you into class…the first class lasting, mayyyybe, 30 minutes and then you get out early to enjoy the weather while it’s still nice out?
Yeah, those days don’t exist in grad school.
In between classes, interning, volunteering, modeling (ha!) and working on my love project (yes, you’re reading it now), this past week has left me exhausted, hungry, and always in a hurry. But boy, have I become quite the multitasker!
Oh and have I mentioned that I’ve fallen in LOVE too?!
No, I haven’t bought a new puppy. And no, I’m not exactly on to something new and trendy, but I re-introduced myself to avocado toast and, ugh (you know the good kind of ugh), I’m in love!!! [Insert emoji with hearts in its eyes]

Well this isn’t quite a recipe because it’s simpler than making PB & J, but here’s why avocado toast is so darn good for ya:
1) The healthy fat in avocados is the BEST kind — heart-healthy monounsaturated fat that makes your skin glow and your hair shiny! Plus, it’s good for your brain and nerves, and lets our bellies stay full (check out this study).
2) 100% whole sprouted grain toast is ahhhh-mazing (and no, they don’t pay me to say that)!!!! It has FIBER, PROTEIN, plus important vitamins and minerals that are found in whole grains! If you follow a gluten-free diet, you can still find whole grain varieties (oats, quinoa, and buckwheat are all gluten free grains!).
Simplicity at its best.
