What I Ate Wednesday 38
WE MADE IT….to HUMP day!!!
One question I get mostly from in-person acquaintances and friends is when do I document my What I Ate Wednesday posts? Like obbbbviouslyyy it’s not actually today because you get the post in the weeeee hours of the mornin’! The real answer is that it varies. Typically, it’s the Monday or Tuesday before the Wednesday (because I’m so good at planning ahead!), but sometimes it’s the Wednesday prior when it’s fresh on mah mind and I’m trying to be a “good” blogger and plan ahead!
This week, these were my eats from Tuesday…
I had a late-ish start to my day because we got home on the later side from celebrating Rosh Hashanah with my family and I was tossing and turning all night (problems of a too full tummy!). So I woke up around 7:30 yesterday morning, and did exactly what I try SO hard not to…went straight to my computer to get some werk werk werk done. I caught up with my Recipe Redux family’s blogging posts (have you seen these INCREDIBLE sandwiches and wraps they created at the bottom of this post?!) over a cup o’ Joe!
By 8:15 I was in the kitchen, making breakfast and a humungo chopped salad to have for lunch for the next couple of days. But then I got antsy to work on my research paper [due on Thursday — ahh] on gluten and neuronutrition. Hmmmm….
So I ate a brown rice cake sweet and savory (see above) with my second cup of coffee. And half of a banana with an extra sunflower seed drizzle.
After writing my paper for a few hours and ignoring my rumbling belly for a little, I got up to grab a snack around 11am…
Egg white salad with spinach, tomatoes, sun dried tomatoes and some red onion mixed together with spicy brown mustard.
I completed an assignment for my research class while I snacked and then while I was rinsing my dishes I got the creative itch, so I took a break from work work and had some fun in the kitchen. I whipped up some Old Bay-spiced salmon cakes from wild canned salmon. I’ll definitely be posting the recipe soon because 1) they’re delish and 2) so good for you…especially your brain, and 3) soooooo EASY!
So once I photographed them, I threw them on top of some salad that I had chopped up earlier.
Note: Key salad ingredient these days = butternut squash! I had some leftover from the salad I brought to Rosh Hashanah with S’s family and it’s a game changer on the salad front. I roasted this batch with some salt and pepper, chili powder and cinnamon….do itttt, pronto!
I uploaded my pics during lunch and gulped a bunch of water. And whistled while I worked on my paper…
A few hours later I had to run to class, but not without another snack, ‘cause, duh! Given I was just home for the Jewish New Year, I snacked on some leftover challah and sunflower seed butter = best combo!
…even though it doesn’t look like the most appetizing thing!
After a 2 hour discussion on statistics and how to analyze my data using SPSS (if you’ve done research, you know what I’m talking ‘bout) — during which I sipped on this entire bottle of agua —
I came home and prepped dinner and munched on some leftover salad from lunch (not pictured). Since it was #NationalTacoDay, we obvs celebrated with TACOS!! Did you check out all the deliciousness on snapchat last night (username: chelseyamer ← follow along!)?!
I sauteed a ton of veggies with garlic and chili powder and cumin and stuffed ‘em into lettuce cups with avocado and salsa. Mmmmm 🙂 And added leftover chicken smothered in salsa for S. Easy peasy lemon squeezy!
And we ended our night with fruit — grapes for moi and an apple for S…
And a few dark chocolate kisses too!
