It’s Thanksgiving week! Weeeeee!!
For some reason, the past few years I get this feeling like it’s Christmas morning when Thanksgiving week arrives. I don’t even celebrate Christmas so I’m not exactly sure what that even means or how I’m supposed to be feeling, but I guess I get the feeling that I think I would feel on Christmas morning…ya feel me?!
Well, Thanksgiving is just 4 days away so now we’re talking EASY. Maybe you already have your menu planned (if not, I have tonssss of ideas here and here), but you totally have room for 5 more ingredients on your shopping list and plenty of time to whip up this appetizer.
Because it encompasses everyones favorite things…Mexican food, pomegranate seeds, and tortilla chips. OK, maybe not your faves, but they definitely rank high on my list of things I would take with me to a deserted island! ((and definitely some guac too!))
This is one of those things that is stupidly simple that it doesn’t even require a real recipe, but it’s totally delish – sweet, but tangy pomegranate seeds complemented with acidic tomatoes, plus classic salsa flavors like red onion, cilantro and garlic.
I purposely didn’t make this spicy so it pleases a crowd, but if you want to add an extra ingredient – and some spice – add a nice pinch of red chili flakes! ((You can also substitute, or add, mint instead of cilantro if you don’t have the taste buds for it!))
Without even knowing it, THIS is what’s missing from your Thanksgiving menu!

- 2 cups tomatoes, chopped (I used Roma tomatoes)
- ½ cup pomegranate seeds
- ¼ red onion, finely chopped
- 2 tablespoons cilantro, chopped
- 1 garlic clove, very finely chopped
- Salt and Pepper, to taste
- Optional: Pinch of chili powder, red chili flakes and/or oregano
- Combine all ingredients in a small bowl and let marinate for at least 15 minutes before serving.
- Enjoy with tortilla chips!
