These Vegan Chocolate Chip Oatmeal Cookies are soft, naturally sweetened, and made with wholesome ingredients like banana, oats, and flaxseed. Perfect for a healthy snack or nourishing dessert, they’re oil-free, dairy-free, and irresistibly delicious.

Ingredients

  • 4 tablespoon ground flax, divided
  • 1 very ripe medium banana, mashed
  • 1 teaspoon pure vanilla extract
  • 1/4 cup oat flour
  • 1 1/4 cup rolled oats (not instant)
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 Tbsp. chia seeds
  • 1/4 cup mini chocolate chips

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper or silpat mat and set aside.
  2. In a large bowl mix together 2 tablespoons of ground flaxseed with 6 tablespoons of water. Let sit for 5 minutes.
  3. Add mashed banana, vanilla extract, oat flour, oats, cinnamon, salt, chia seeds, remaining flax, and chocolate chips. Mix together until thoroughly combined.
  4. Using an ice cream scooper, scoop the dough onto the prepared baking sheet. Slightly flatten the cookies. Repeat until all dough is used. 
  5. Bake at 350°F for 15 minutes, or until the edges are golden brown. Let cool for a few minutes before transferring to a cooling rack. Store in an airtight container.
