1/2 cupchocolate chips, plus additional for sprinkling on top
Instructions
Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper or spray with oil (I use my Misto).
Make flax “eggs” by combining 2 tablespoons ground flaxseed with water. Stir and let sit for a few minutes.
After a few minutes, add all ingredients to your Vitamix or high-powered blender, except for 1/4 cup chocolate chips. Blend on medium-high speed until all ingredients are combined. You may need to pause to scrape down the sides.
Pour brownie batter into your prepared baking dish and sprinkle with the remaining 1/4 cup of chocolate chips. Bake for 40 minutes, or until inserted toothpick comes out clean.
Let cool completely before cutting and serving. Enjoy! 🙂
