Get your Meatless Monday dinner in the Halloween spirit with these Spooky Black Bean Eyeball Subs made with tender black bean “eyeballs,” prepared in less than 45 minutes! Vegan. Gluten free.

Ingredients

  • 1 15 oz cans black beans, drained and rinsed very well
  • 2 cloves garlic
  • 2 tablespoons ground flaxseed meal
  • 1/4 cup ketchup
  • 1/2 teaspoon black pepper
  • 2 teaspoons no salt added Italian seasoning
  • 1/4 cup quick oats
  • 2 cups store-bought marinara sauce
  • 4 whole grain hot dog buns or hero rolls
  • 1 zucchini, spiralized, or cut into very thin strips
  • 4 olives, thinly sliced
  • 4 bocconcini mozzarella balls
  • 8 capers

Instructions

  1. Preheat oven to 350°F.
  2. In a food processor or high powered blender, combine black beans, garlic, ground flaxseed meal, ketchup, and spices. Pulse until well combined. Then add oats and pulse a few more times, until just combined.
  3. Remove this batter from processor and form into about 12 1 1/4 inch balls, with about 2 tablespoons of batter for each ball.
  4. Bake for 15 minutes, then turn gently and bake for an additional 15 minutes, until the exterior is golden brown.
  5. Then, in a medium skillet over low heat, warm marinara sauce and add bean balls. Once sauce is heated through, assemble subs with spiralized zucchini and additional marinara sauce.
  6. To make “eyeballs”, layer sliced bocconcini and olives and place a caper in the center to resemble eyeballs. Enjoy immediately!
