Spinach and Feta Turkey Meatballs with Spaghetti Squash

Spinach and Feta Turkey Meatballs are flavorful, nutritious and delicious to pair with spaghetti squash for an easy weeknight meal the entire family will love! Add pasta for a carb to turn this recipe into a balanced meal! You’ll be repeating this one often!

Ingredients

  • 2 spaghetti squashes
  • 1 lb ground turkey or chicken
  • 1 cup finely chopped baby spinach
  • ¼ cup chopped scallions
  • 1 large egg
  • 2 teaspoons dried oregano
  • 1 teaspoon granulated garlic
  • ½ teaspoon smoked paprika
  • ¼ teaspoon black pepper + salt
  • 1/3 cup crumbled feta

Instructions

  1. Cook spaghetti squash following these instructions.

While the spaghetti squash cooks, prepare the Spinach and Feta Turkey Meatballs: 

  1. Preheat the oven to 375°F. 
  2. In a large bowl mix together the ground turkey with baby spinach, scallions, egg, oregano, garlic, smoked paprika, plus salt and pepper. Fold in the feta until evenly combined.
  3. Form into 12 balls and place on a baking sheet.
  4. Bake for 10 minutes, until the internal temperature reaches 160-165°F.
  5. Serve over spaghetti squash with a drizzle of olive oil, kalamata olives, additional feta, and parsley. Enjoy!
