This Sheet Pan Chicken Sausage and Gnocchi recipe is a simple and flavorful one-pan dinner featuring tender chicken sausage, crispy gnocchi, roasted brussels sprouts, and a burst of sweet grape tomatoes that comes together in just minutes of hands-on prep time. With just a few seasonings and minimal prep, it’s a quick, healthy, and satisfying meal perfect for busy weeknights.

Ingredients

  • 1 12 oz package Italian chicken sausage (see post for suggested brands), sliced diagonally into bite-sized pieces (see images)
  • 1 16oz package fresh potato gnocchi
  • 16 oz brussels sprouts, trimmed and halved with rough outer leaves removed
  • 2 cups grape tomatoes
  • Optional: 4-5 whole garlic cloves
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F. Line a large sheet pan with parchment paper or a silicone baking mat.
  2. Add the chicken sausage, gnocchi, brussels sprouts, grape tomatoes and garlic cloves (if using) to a large baking sheet. Drizzle with olive oil and sprinkle with oregano and black pepper. Toss everything together until evenly coated and spread out evenly on the baking sheet. Make sure the ingredients aren’t overcrowded for even roasting.
  3. Roast in the preheated oven for 25-30 minutes, flipping halfway through to ensure everything browns evenly.
  4. Remove from the oven and sprinkle with parmesan cheese, if desired. Enjoy!
