1/2 cup olives, halved (I used kalamata olives, but choose your favorite variety)
Instructions
Preheat oven to 400°F.
Spread potatoes and green beans on a large baking sheet and spray with oil (I use avocado oil in my Misto). Sprinkle with salt and pepper, then roast for 20 minutes, until potatoes are crispy on the outside.
While the vegetables are roasting, boil your eggs (if needed) and arrange salad. Layer greens, hard boiled eggs, and olives. Add roasted green beans and potatoes when done cooking. Last, add the salmon and serve! Enjoy! 🙂
