Roasted Dill Carrots Recipe

This Roasted Dill Carrots Recipe is the best carrot recipe of all time! Caramelized roasted carrots are tossed with sweet red onions, dill and capers, for a healthy side dish you’ll enjoy eating!

Ingredients

  • 4 cups carrots sliced on an angle
  • 1 red onion, thinly sliced
  • 2 tablespoons olive oil, divided
  • 1/4 cup + 2 tablespoons dill
  • 2 tablespoons capers

Instructions

  1. Preheat oven to 375F.
  2. In a large bowl toss carrots and red onion with 1 1/2 tablespoons olive oil and dill. Distribute carrots and onions on a large parchment paper lined baking sheet.
  3. Roast for 35-40 minutes, tossing once in the middle, until carrots are soft to fork.
  4. Transfer carrots to a large bowl and toss with additional fresh dill, capers, and 1/2 tablespoon olive oil. Serve warm.
