High Protein French Toast Bake with Blackberries

High Protein French Toast Bake with Blackberries is a delicious make-ahead brunch that your entire family will love! Repurpose stale bread to cut down waste and create a french toast casserole with a crunchy top and perfectly tender middle so you’ll enjoy every bite!

Ingredients

  • 10 cups cubed challah 
  • 2 cups milk (or other milk alternative)
  • 8 large eggs
  • ½ cup orange juice 
  • 2 tablespoons pure vanilla extract
  • 2 tablespoons ground cinnamon
  • 1/2 teaspoon salt
  • 4 scoops vanilla protein powder
  • 1 cup blackberries
  • Optional (but recommended!): Pure maple syrup

Instructions

  1. Coat a large baking dish (~9 x 12”) with nonstick spray. Add bread and blackberries and set aside.
  2. In a large bowl, whisk together milk, eggs, orange juice, vanilla extract, cinnamon, salt, and protein powder so no clumps remain.
  3. Pour wet ingredients over the bread and make sure all bread is soaked thoroughly. Mix carefully so combined. Cover and refrigerate overnight. 
  4. In the morning, preheat the oven to 350°F. 
  5. Bake for 50-60 minutes. Top should be crispy and browned on top when done. Let sit for a few minutes before serving with pure maple syrup and Greek yogurt.
