Gluten Free Green Blender Waffles

Green Blender Waffles are an easy make-ahead breakfast or snack that packed nutrients into every bite! Make breakfast time easy with these green waffles that are a high protein breakfast option.

Ingredients

  • 3 small to medium ripe bananas
  • 6 large eggs
  • 1 cup rolled oats
  • 3 cups baby spinach
  • ½ teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a high-powered blender or food processor combine bananas, eggs, oats, baby spinach, cinnamon and salt. Blend until smooth.
  2. Heat your waffle iron. Spray with nonstick cooking spray.
  3. Pour enough batter into the waffle iron to fill it (this amount varies based on the size of your waffle iron). Cook until golden brown and cooked through. For my mini single-serve waffle iron I added about ¼ cup of batter and cooked for just 3 minutes.
  4. Serve with fruit, yogurt, maple syrup, etc.
