For the salad:

  • 1 lb green beans
  • 3 thinly sliced cucumbers 
  • 1/3 cup thinly sliced red onion
  • 2 tablespoons fresh chopped dill
  • 1/4 cup parsley
  • 1/2 cup cubed feta
  • 1/4 cup pumpkin seeds
  • Dried oregano to taste

For the Maple Mustard Dressing:

  • 1/4 cup Dijon mustard
  • 1/4 cup olive oil
  • 3 tablespoons maple syrup or honey
  • Salt & pepper to taste

Instructions

  1. Blanch green beans. Bring a large pot of water to a boil, then add green beans. Cook for just 3-5 minutes until bright green and crisp to bite. Immediately drain and put in a large bowl of water with ice to stop the cooking process. Set aside.
  2. Prepare the Maple Mustard Dressing. Combine dijon mustard, olive oil, maple syrup and salt and pepper in a jar with a lid. Shake until combined. Set aside.
  3. In a large bowl combine green beans, cucumbers, red onion, dill, parsley, feta and pumpkin seeds. 
  4. Drizzle the dressing on top and toss together.
