This Gluten Free Chocolate Chip Snack Cake is an easy after school snack that’s every bit delicious as it is nutritious! Made with whole grain oat flour, and in one bowl, this low sugar snack tastes just like cake with a healthier twist! Yes, my kids eat it for breakfast!

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl mix together the applesauce, milk, oil, sugar, and vanilla extract. Then add the flour, cinnamon, baking soda and salt.
  3. Fold in the mini chocolate chips.
  4. Spray an 8-by-8 baking dish with oil spray. Pour the batter into the dish. Sprinkle additional chocolate chips on top, if desired.
  5. Bake for 30 minutes, until the top is golden brown. Let cool completely before cutting into squares.
