In a large bowl mix together SunButter, egg, sugar, and vanilla until well combined. Fold in chocolate chips and dried cranberries.
Scoop dough into 1-inch balls and place on a parchment paper-lined baking sheet. Slightly flatten with the palm of your hand. Bake for 10 minutes until the tops appear set.
Remove cookies from the oven and let cool completely on the baking sheet. This part is very important! Once cooled, store in an airtight container.
