ears of corn, kernels cut off (about

of corn kernels)
1 cup
shelled edamame
1
medium bell pepper, finely chopped
½ cup
chopped tomatoes
¼ cup
red onion, finely chopped
¼ cup
chopped cilantro
½ teaspoon
cumin
½ teaspoon
salt
½ teaspoon
black pepper
2 tablespoons
olive oil
1 tablespoon
lime juice

Instructions
In a large bowl toss together the corn kernels and edamame with bell pepper, tomatoes, red onion, and cilantro.
Season with cumin, salt and pepper. Drizzle olive oil and lime juice on top and toss together.
Store in an airtight container in the refrigerator. Enjoy!
