Dairy Free S’mores Ice Cream

Some flavors just scream summer. I’m talking a juicy peach dripping down your chin, lemonade on a hot day, hot dogs and hamburgers cooked over an open barbecue flame, and ooey gooey S’MORES!

Every year at summer camp we would go on at least one overnight trip. My personal favorite part was the s’mores we would make over the campfire (because DUH!). There’s nothing better than graham crackers, melty marshmallow, and chocolate that softens juuuuust enough.

So when I was thinking of my next flavor of dairy free banana ice cream to whip up, s’mores ice cream obviously came to mind!

Non-Dairy Ice Cream Alternatives

For those of us that don’t always tolerate dairy so well, there are now luckily tons of options out there. My personal favorite is banana “ice cream.”

It’s creamy, naturally sweet, so easy to make, food allergy friendly, and just all around DELICIOUS! Plus, if you can get some extra vitamins and minerals in there by using fruit, why not?!

(Hint: there’s NO NEED to fear bananas!)

If you haven’t tried banana ice cream (or “nice cream” as some like to call it), whatchu waiting for?

My classic go-to combination for banana ice cream is my salted double chocolate version. Even though I’ve never been a chocolate ice cream kinda gal, this always hits the spot when a chocolate craving comes on. And if I’m really treating myself, I’ll add rainbow sprinkles on top!

But since I’m always thinking of new flavors to try (like my Cherry Chocolate Ice Cream I shared last summer), I was ready to push the limits and make something EXTRA GOOD.

You’ve gotta try my newest banana ice cream flavor…

I used a similar base as my double chocolate banana ice cream, dotted it with mini marshmallows, graham cracker pieces, and chocolate chunks.

Sometimes you just don’t need the toppings on top of your ice cream, but rather mixed in. Dontcha love picking out all the delicious mix ins?

Here’s how to make Dairy Free S’mores Ice Cream…

The base of this “nice cream” starts with bananas. Bananas have a natural creaminess when frozen and blended that lends an ice cream-like texture. Plus, bananas are full of potassium, vitamin C, vitamin B6, magnesium, and some fiber. You’re not going to find all that in your typical ice cream!

To make your “blender ice cream” easy to blend, I suggest freezing SLICED bananas instead of whole bananas. This way, it’s MUCH easier to blend with less liquid so you get more naners, less water or milk mixed in. This also amps up the creaminess and limits the icy factor.

Another pro tip when making banana ice cream… always put some liquid in the blender FIRST. Then add the fruit, cocoa powder, and salt before blending. Trust me, it just makes it easier!

Dairy Free Ice Cream Alternatives

Let’s talk about sweet treats for a little…

I’m a big believer that we should have our cake (or ice cream!) and feel great too. There’s NO NEED to abstain from your favorite foods… ice cream, included!

When we restrict favorite foods, we want them more. Remember this restrict/binge cycle? It’s basic human nature – we want what we “can’t” have.

That’s why I WANT you to indulge your sweet tooth.

HOWEVER, if you have a sweet tooth (like yours truly), it may be beneficial to lighten’ up your favorites so you can still FEEL GOOD.

As much as I would love to eat a huge Oreo ice cream cone everyday with hot fudge or even marshmallow fluff, I would feel like absolute CRAP after, and likely the next day too. Dairy doesn’t always agree with my stomach and I’d likely get a sugar overload headache. Then the next day I’d probably feel sluggish and blah from eating a fun food that doesn’t help me feel so good.

Of course, there’s a time and a place for these indulgent fun foods that may not always help us feel good. BUT, if you like to regularly indulge your sweet tooth (like moi), having a lighter option can be really helpful.

Dairy Free S’mores Ice Cream

Ingredients

Scale

5 frozen bananas, sliced into 1/2-inch coins

1/4 cup milk of choice (or water)

1/4 cup unsweetened cocoa powder

Generous pinch of salt

1/2 cup chocolate chunks

1/2 cup mini marshmallows

3 sheets graham crackers, roughly crushed

Instructions

  1. Line a baking sheet with parchment paper. Place sliced bananas on baking sheet and freeze for about 2 hours.

  2. When bananas are frozen, add milk (or water), frozen banana slices, cocoa powder, and salt to a high-powered blender or food processor. Process until smooth. You may need to pause to scrape down the sides of the blender to make sure bananas are fully blended and smooth.

  3. Transfer banana ice cream to a loaf pan or freezer-safe dish.
  4. Mix in chocolate chunks, marshmallows, and crushed graham crackers.
  5. Cover ice cream and freeze for at least 4-8 hours, depending on your desired consistency.
  6. Serve in a cone (trust me!).
