Cottage Cheese Pancakes Recipe

This Cottage Cheese Pancakes recipe is exactly what’s been missing from your breakfast repertoire! Cottage cheese pancakes are packed with protein and fiber, the fluffiest healthy pancakes, and loaded with flavor. Top with any fresh fruit and a drizzle of maple syrup.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1 tablespoon milk
  • 1 cup rolled oats
  • 1 tablespoon brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Butter for cooking*

Instructions

  1. Add all ingredients, except the butter, to a high-powered food processor or blender. Blend until the batter is smooth.
  2. Heat a thin slice of butter, about ½ teaspoon, in a large skillet over medium heat until coated. 
  3. When the pan is hot, pour ⅓ cup of the batter into the skillet. Let cook for about 3 minutes, until the batter looks set and small bubbles start to form. Carefully flip and let cook for another 2 minutes. Carefully remove from the skillet and repeat until all the batter has been used. Re-butter the pan as needed so the pancakes do not stick to the skillet.
  4. Top with fresh fruit and pure maple syrup, if desired. Enjoy!

Notes

*Alternatively, you can use non-stick oil spray, but they taste so much better with butter!
