  • 2 lbs thinly sliced chicken breasts (or any cut of chicken you’d like!)
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons dijon mustard
  • 1 tablespoon brown sugar
  • 2 garlic cloves, finely chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano

Instructions

  1. Season chicken with salt and pepper on both sides, then set aside.
  2. In a large bowl combine balsamic vinegar, olive oil, dijon mustard, brown sugar, garlic, smoked paprika, oregano, and remaining salt and pepper. Whisk together until combined.
  3. Add the chicken to the marinade and cover. Refrigerate for at least 1 hour, up to overnight.
  4. When ready to cook, preheat a large cast iron skillet, grill pan or grill until hot. Spray with nonstick cooking spray. Add chicken to the pan, without overlapping or crowding. The chicken should sizzle immediately when added to the pan.
  5. Cook chicken for about 3-5 minutes on each side, until cooked through to an internal temperature of 165°F (use a meat thermometer!)
