Massaged Kale and Artichoke Salad

For a satisfying salad that’s easy to make and delicious you must try this massaged Kale and Artichoke Salad! Jarred marinated artichokes and nutty farro add so much flavor and texture to an otherwise tough green. The key to the best kale salad is to let the greens marinate for at least an hour before serving. Everyone will love this artichoke salad!

Ingredients

Scale
  • 1/2 cup farro
  • 24 bunches kale (depending on the size, about 6 cups finely chopped kale)
  • 1 12 oz jar marinated artichokes, liquid reserved
  • 1 pint grape tomatoes, halved
  • 1/2 cup raisins

Instructions

  1. Prepare farro according to package instructions. Let cool slightly.
  2. While farro cooks, add the remaining ingredients to the large mixing bowl.
  3. Add the farro and toss in the marinade from the jarred artichoke hearts. Let sit for at least one hour before serving. Enjoy!
