2 Ingredient Egg Muffins

  • 8 whole eggs
  • 1 10 oz package frozen spinach, thawed with excess water drained
  • Spices of your choice (I recommend salt and pepper, turmeric, oregano or garlic powder)
  • Oil for coating muffin tin

Instructions

  1. Preheat oven to 350°F. Spray a silicone muffin tin with oil or nonstick spray, so well coated.
  2. In a medium-sized bowl, whisk together eggs with spinach. Add desired spices.
  3. Pour egg mixture into muffin tin cups, almost to the top. You should be able to make 12 muffins.
  4. Bake at 350°F for about 22-25 minutes, or until eggs are completely set.
  5. Let cool and remove from tins.
  6. To reheat, you can microwave for about 30 seconds.
